Chocolate Chip Cookies Vegan and Gluten-Free

Preheat Oven to 375°: Makes 25 cookies

Ingredients:

2 Tbs. ground flax seeds

2 Tbs. chia seeds

½ cup milk alternative (I used oat milk)

2 cups Rolled oats

1 cup GF flour

1 cup almond flour

1 cup Tapioca Flour

1 cup Arrowroot flour

1 cup chopped Walnuts

½  t. baking powder

1 t. baking soda

1/2 t. Cinnamon

1 cup Tahini

1 Tbs. molasses

1-1/2  cup Maple syrup

2 t. Vanilla

1- 10-12 oz. bag Dark Choc chips

Instructions:

1. Mix the flax seeds, chia seeds, and milk alternative together in a small bowl, and set aside.  

2. Meanwhile, mix the dry ingredients together in a bowl.

3. In a separate bowl, mix the Tahini, molasses, vanilla, and maple syrup together.  

4. Add the flaxseed mixture to the wet ingredients.

5. Mix the wet ingredients with the dry ingredients until well blended. Stir in the chocolate chips.

6. Drop cookies onto well-greased cookie sheet and bake for 10 minutes.

7. Turn pan, and back for another 5-10 minutes, depending on your oven and how crispy you like them. They will crispen up as they cool.
