Peanut Butter Chocolate Chip Cookies, Vegan

Preheat Oven to 375° / Yields 44 Cookies

Ingredients:

2 Tbs. ground flax seeds

2 Tbs apple cider vinegar

1 cup ground Rolled oats

1 cup flour

½  cup ground walnuts

¼  cup Tapioca Flour

½  t. baking powder

1 t. baking soda

1 t. salt

¾  cup Peanut Butter

¼ cup coconut oil

1 Tbs. molasses

1-1/2  cup Maple syrup

2 t. Vanilla

1- 10-12 oz. bag Dark Choc chips

Instructions:

1. Mix the flax seeds, and apple cider vinegar together in a small bowl, and set aside.

2. Meanwhile, mix the dry ingredients together in a bowl.

3. In a separate bowl, mix the Peanut Butter, coconut oil, molasses, vanilla, and maple syrup together.

4. Add the flaxseed mixture to the wet ingredients.

5. Mix the wet ingredients in with the dry ingredients until well blended.

6. Stir in the chocolate chips.

7. Drop cookies onto well greased cookie sheet and bake for 10 minutes. Turn pan, and bake for another 5-10 minutes, depending on your oven and how crispy you like them. They will crispen up as they cool.
