In the News: Water Shortages are Looming! Add Sesame to the New List of Allergic Foods!

25% of Our Worlds Population is Facing a Looming Water Crises

I remember seeing the show Urinetown many years ago, and the thought of paying for water was absurd. Fast forward many years, and we not only pay for water, but we are also facing the possibility of there being no water at all! The possibility of running out of water is becoming a reality for one-quarter of the world’s population.

There are 17 countries around the world that use as much water as they have, and are at the brink of disaster, according to a new report from the World Resources Institute. It’s predicted, that by 2030, there will be 45 countries without enough water. Climate Change is playing a big part, with extreme, unpredictable weather conditions, rainfall is less reliable, and hotter weather causes more evaporation. Many of the cities that are experiencing water shortages today, were experiencing fatal floods just a few years earlier, making the swing from one extreme to another even more alarming.

Cooking for people with food allergies is something that I have done for years. Most of my clients were allergic to something, either milk, eggs, fish, shellfish, peanuts, wheat, soybeans or tree nuts. But now, we are hearing about sesame also being an extremely allergic food. In fact, more than one million children and adults are allergic to sesame in the United States, an ingredient used in everything from hummus to bagels, to Japanese food.

Currently, federal law requires manufacturers to list the eight most common allergens: milk, eggs, fish, shellfish, peanuts, wheat, soybeans and tree nuts. If a product contains one of those ingredients, it is clearly marked on the label, but sesame is not one of those allergens listed. Some people are trying to change that!
