We’ve seen a lot of fake meat products entering the market over the past few years, and I knew fake fish was around the corner, and it’s finally making a grand entrance.
A few years ago, I interviewed Chad Sarno, one of the brothers behind the great vegan cookbook, Wicked Healthy, and he discussed the new venture he and his brother, Derek, were working on, Good Catch, a faux fish company! They have come out with tuna-free tuna in three flavors (plain, Mediterranean, and oil and herbs), made from 6 different legumes, and some algae oil. The legumes gives it a flaky texture that resembles fish, while the algae oil gives it a fishy flavor. Soon they will have a line of frozen foods too.
Another company, Ocean Hugger Foods, created a faux ahi tuna, using only tomatoes, soy sauce, salt, sugar and water, and managed to replicate the rich, fatty texture of ahi, a sashimi staple. They call it “ahimi,” which means “the spirit of ahi.”
