An Interview with Iman Marghoob M.S.,R.D. Community Gardens Coordinator at Stony Brook Medicine

Hi All,

This has been another wonderful week in my food world! On Friday, I participated in my first Seafood Throwdown, which was a friendly competition, as part of the “Grown on LI Day” out at the Sufflok County Farm in Yaphank. Each contestant, there were two of us, we’re given a secret fish and secret produce that had to be incorporated into the meal. The fish was Squid and the produce was corn. We were given a grill and two counter top burners. Washing the produce from the portable water station really slowed things down, but we were given an hour to do the cooking, and were allowed to bring 3 ingredients with us. I brought olives, capers and white wine, to make a tapenade to go along with the Grilled Mediterranean Calamari, and Roasted Lime Cilantro Corn. It was a lot of fun!

The weekend mornings are dedicated to the Slow Food Farmers Markets, which we have in Huntington and Port Washington, and we are working hard to generate more interest in the Slow Food Movement and to raise our membership pool. We have so many great ideas of events we want to host and campaigns that we want to support, but we need membership dedication to help us accomplish all that we want to do. Iman is the Community Garden Coordinator in the Dept of Family Medicine at StonyBrook University, which is responsible for running their roof top garden, and helping to assist low income communities in starting Community Gardens. Iman is also a fellow member of the Suffolk County Food Policy Council, and is helping to set up a website that would streamline the process for establishing Community Gardens.
