iEat Green Shares Interview with Rene Rodriques, the Owner and Chef at Tawa Restaurant in Peru

Hi Everybody,

I had a wonderful interview this week with Chef Rene Rodriguez, the owner of Tawa Restaurant in Yucay, Peru. I met Chef Rene this past Spring, when I took a vegetarian cooking class with him at his beautiful restaurant in the Sacred Valley of Peru. I was so impressed with his commitment to sourcing local ingredients and the organic garden they had in the back of the restaurant, that I wanted to share this gem with all of you. If you find your way to Peru and the Sacred Valley, make sure you pay Tawa Restaurant a visit. It is worth the trip! The recipe I shared this week, the Vegetable Curry Quinotto was inspired by a dish he taught us while we were there.
