iEat Green Shares Interview with Chef Zahra Tangorra!

Hi Everyone,

I just finished my interview with Zahra Tangorra, the chef and owner of the beloved restaurant Brucie, which closed in 2016, and the chef and co-creator behind Zaza Lazagna, (@zaza_Lazagna) which was a pop up during the pandemic. We talked about our shared love for food and hospitality, and how in this capitalist society, access to quality food is unfortunately not available to everyone. However, we also shared some of our favorite pasta recipes which are easy to make, very affordable, and so delicious, like Spaghetti with Cannelloni Beans and fresh herbs and tomatoes, or Cacio e Pepe, which is spaghetti with butter, fresh ground pepper, Parmesan and Pecorino cheese. If you want to make Cacio e Pepe Vegan Style, substitute olive oil or vegan butter for the real butter, a little cashew crema with a squeeze of lemon, and some nutritional yeast for the cheese. It’s a very close substitute and very delicious!!

Zahra also hosts two podcasts on Heritage Radio Network, “Life’s a Banquet”, which is a podcast about the highs and lows of everything edible, spreadable and pourable,  and “Processing”, which she co-hosts with her mother, Bobbie Comforto, as they explore the intersection of food and grief with their weekly guests.
