iEat Green Cooks Up Fonio for the First Time! Bhavani Welcomes Jennifer Gaddis, Author of “The Labor of Lunch” to PRN!

Hi All,

Last week, I read about Chef Pierre Thiam’s new venture, to introduce the grain Fonio, to the U.S. market. Pierre Thiam is a chef from Senegal and was a guest on my show a few years back. We had discussed the grain Fonio during our conversation, but I had forgotten all about it. Now, through his company, Yolélé, you can easily purchase the grain at Whole Foods, and other specialty stores.

Check out my recipe this coming week, where I made a Fonio Pilaf, with some fresh herbs and sauteéd vegetables. It’s similar to couscous, in the fact that it cooks up fast, but it is gluten-free and is an ancient whole grain that has been a staple in Africa for 5000 years. I’m excited to play with this new ingredient and to see what other flavors it can take on!

 

Jennifer Gaddis, Author of, The Labor of Lunch, Joins Bhavani on the Progressive Radio Network

Jennifer Gaddis is an assistant professor of Civil Society and Community Studies at the University of Wisconsin-Madison and the author of The Labor of Lunch: Why We Need Real Food and Real Jobs in American Public Schools (University of California Press 2019). She received a Ph.D. in environmental studies from Yale University in 2014. Her research on school lunch programs has appeared in numerous journals, including Feminist Economics and the Journal of Agriculture, Food Systems, and Community Development, and in popular media outlets such as the New York Times, Washington Post, USA Today, and Teen Vogue.

As a person who has worked within the school lunch programs, and who is currently the Farm to School Coordinator at our local public school, this topic is very dear to my heart, and I am looking forward to my conversation with Jennifer. I hope you can join us!
