iEat Green: An Interview with Mark Kastel

Yesterday, I had the pleasure of interviewing Mark Kastel, the co-founder of The Cornucopia Institute, a non-profit organization committed to supporting economic justice for the family-scale farming community, while advocating for local, organic and authentic food. As a consumer, I know I can trust the Cornucopia Institute to direct me in choosing the highest quality of organic products. They have a full list of scorecards on their website, that rates the most nutritious, best tasting and most humanely raised eggs, dairy, cereals and soy products, based on criteria we can trust. The Cornucopia Institute is a watchdog for consumers and small family farmers, challenging the “status quo” and the corporations that have infiltrated the National Organic Standards Board. At every opportunity, big corporations are trying to weaken our organic standards and we need organizations like Cornucopia, to help us maintain high standards for our USDA organic label.
