An Interview with Carl Safina, President of the Blue Ocean Institute

Hi Everyone,

I don’t know where the time goes! One week just flies by and rolls into the next week, with very little down time in the middle. Thank God I love what I do, or I would go batty!

I harvested all of my peppers, and since most of them IMG_1772were of the spicy, hot variety, I had no choice but to make hot sauce. Unfortunately, I didn’t have any tomatoes left, to make a salsa, so I just made 2 types of concentrated hot sauces, that I froze in little batches, and will take out and add to dishes and salsas, as I need them. This week on my radio show, I will share the recipes that I came up with.

This past weekend, I gave a cooking demo to parents at The Waldorf School of Garden City. The class was a continuation of last Springs class on “Simplicity in the Kitchen,” and how to include your children in getting dinner on the table. The focus of this class was “Simplicity in the Morning” and how to create healthy breakfast foods to send your children off to school with a full belly. The participants got to sample the vegan and yogurt smoothies, while snacking on the homemade granola and almond milk, before they sat down to a full brunch of Huevos Rancheros, Scrambled Tofu and Veggies, Buckwheat Crepes with Apples or Asparagus, and Breakfast Burritos. Everyone went home with a full belly and lots of ideas to take to their children!

And speaking of time flying by, it is already time for me to gear up for the big Thanksgiving event! For those of you not familiar with our Thanksgiving Feast, every year we partner with the River Fund Food Pantry, to bring a delicious Thanksgiving Dinner to over 600 hungry New Yorkers, on the Tuesday before Thanksgiving. Risking his science career, he helped lead campaigns to ban high-seas driftnets, re-write and overhaul U.S. Federal Fisheries Law, use international agreements toward restoring depleted populations of tunas, swordfish and sharks, achieve passage of a United Nations Global Fisheries Treaty and reduce fishing-gear drownings of seabirds and turtles.? Dr. Safina holds a PhD in ecology from Rutgers University and honorary doctorates from Drexel University, Long Island University and the State University of New York.?
