iEat Green Shares Interview on PRN with Dietician and Author, Brenda Davis!

This past Thursday, I had the pleasure of talking with the rock star of plant based eating, Brenda Davis! Brenda has been a plant based advocate for over 30 years, and has co-authored 11 books, including the award winning books, “Becoming Vegan: Comprehensive Edition” and “Becoming Vegan: Express Edition.” As she explains, “plant based foods are concentrated with healing components, are anti-oxidents, anti-inflammatory, and help to fight disease.” She has witnessed the power of plant based eating, and has helped so many people regain their health through a whole foods, plant based diet.

As a dietician, Brenda understands nutrition, and is able to guide the plant based eater, to avoid some of the pitfalls that some vegans can fall into. For instance, a plant based eater needs to be make sure they are getting enough Vitamin B12 and iron, which is normally found in animal foods. Brenda suggests eating fortified foods, such as cereals or milk alternatives, adding nutritional yeast to your foods, or taking a B12 supplement. We also discussed the preparation of foods, and while she suggests doing most of your cooking with moisture, such as soups and stews, she also recognizes the benefits of balancing taste with health outcomes, and the enjoyment of eating vegetables that are roasted and grilled.
