iEat Green Interviews Chef Pierre Thiam on African Cuisine

Hi All,

Today I had the distinct pleasure of interviewing Chef Pierre Thiam on my radio show. I was so impressed by his breath of experience, and his desire to make his restaurants not just about the food, but about the community it was bringing together. Chef Pierre Food_pierreunderstands that food is not just about food, but that it is tied up with culture and memories that are rich and unique. Growing up in Senegal, it was the women that did the cooking, but the flavors and influences of the land, sea and other nationalities, made the African Cuisine of his childhood special. When he came to the States, he was introduced to the idea that becoming a chef was an acceptable career for men too. Chef Pierre takes pride in blending the flavors of his childhood with the experiences he acquired in the restaurants of New York, and has been wooing New York ever since!
