here is an easy almond milk recipe that I use all the time.
This recipe for Almond Milk is so simple, and yet it is a far cry from the processed almond milk you can by in the store. It is free from all ghar gums, sugars and stabilizers, and is so easy to make. You can substitute cashews, macadamia nuts, or oats, and get the same great results. Fresh nut milk is so much better than any store bought kind. You can make it as thick or thin as you like, depending on your preference. This recipe is more like a guideline for you to experiment and feel out how you like to make it for yourself. Have fun and Enjoy!
- 1 cup raw almonds, soaked overnight in water
- 3 cups water
- 2 -3 dates
- ½ t. vanilla (optional)
- dash of salt
- Cheesecloth
- Drain soaked almonds and put in Blender
- Add 3 cups of water, dates, vanilla and salt
- Blend on high speed until completely smooth
- Pour through large sieve, lined with cheesecloth
- Squeeze excess water out of almonds, by folding up cheesecloth, and twisting
