iEat Green Shares Interview with Jennifer Gaddis, Author of “The Labor of Lunch”

Hi Everyone,

Yesterday I had an in depth discussion with Jennifer Gaddis about her book, The Labor of Lunch, and her research on the National School Lunch Program. Did you know that over 39 million kids participate in the program, and for many of them, that is the only meal they can count on? That is why it is so important for the food we are serving to be delicious, healthy, and an example of a balanced meal. It needs to include lots of fresh fruits and vegetables, and should be free of GMO’s, chemicals, artificial preservatives and colors. Unfortunately, that is not the case.

If you want to delve into the topic further, Jennifer developed a community reading guide, along with a classroom curriculum guide. It also includes some short videos and series of video shorts.

Here is another.

As two people so passionate about the subject, it was impossible to address all of the topics we wanted to cover, so I invited her to come back again next week!

Please listen to the below interview, and plan on joining us again next week, as we continue the important discussion about how and what we feed our kids, and what we can all do to improve it.
