Finally, we had a weekend of superb weather in the New York area for our 4th of July gatherings! Whether you were at a pool or beach, BBQ, pot luck, or firework display, you couldn’t have asked for better weather.

However, as we have all heard, Texas wasn’t so lucky. They had a devastating storm with flash flooding that took the lives of over 100 people, with more people still missing. The question on everyone’s mind is whether the cuts to the National Weather Service (NWS), along with the cuts to the National Oceanic and Atmospheric Administration (NOAA), had to do with the poor communication to the local counties hardest hit.
The National Weather Service lost over 600 employees since Trump took office, and there are currently 6 vacancies in the Austin/San Antonio Weather Forecast Office. which was the office responsible for Kerr County, the hardest hit county. The current administration has eliminated funding for the Office of Oceanic and Atmospheric Research and the National Severe Storms Lab, both of which do vital research and modeling of severe weather, so the likelihood of a tragedy like this happening again is great. In addition, Trump has cut funding to FEMA (the Federal Emergency Management Agency) so states will be hard hit to pick up the pieces from tragedy’s like these, and fund the rebuilding of homes, businesses and infrastructure.

I’m very excited to be leading a Mediterranean Cooking Class on July 24th, beginning at 5 PM. We all have heard that the Mediterranean Diet is a healthy diet, but how can we make it vegan and keep the health benefits in tact? There are many alternative ingredients that one can use to adjust a recipe to become vegan, and in this class we will dive into many of those substitutions, and create a multi course meal that we will all enjoy together.
We will start with the appetizers, Hummos and Baba Ghannouj, followed by the Main Course of Moussaka, Stuffed Zucchini, Israeli Cous Cous Pilaf and Tabouli Salad. For dessert, we will enjoy a refreshing Coconut Rice Pudding with Rose Water.
