Caesar Salad & Dressing
- 1 large head Romaine lettuce, chopped
- 2 cloves garlic
- 4 anchovy fillets
- 1 Tbsp Dijon Mustard
- 2 lemons, juiced
- 1 Tbsp chopped parsley
- ½ cup extra virgin olive oil
- ¼ cup parmesan cheese
- 1 package of Gluten Free Croutons
- fresh black pepper
- Make it Vegan!:
- Substitute Anchovy Fillets for 1 Tbsp Capers
- Substitute ¼ Parmesan Cheese for 2 Tbsp Follow Your Heart Parmesan Style Vegan Cheese & 2 Tbsp Nutritional Yeast
- Wash, cut and spin lettuce.
- In food processor, pulse the anchovies and garlic.
- Add the lemon juice, mustard and parsley. Pulse some more.
- With the food processor running, Add the Olive oil in a drizzle through the opening in the top.
- Add the parmesan cheese and black pepper to taste.
- Toss with lettuce and croutons right before eating, then enjoy!
