Hi Everyone,
The 4 inches between where my gloves ended and my shirt started are covered in poison ivy and scratches from
removing vines the past two weekends. I clearly need to get longer gloves!! It seems appropriate that my weekend activity coincided with N. Y. S. Invasive Species Awareness Week, because the vines were everywhere! This is a great time to remove them before they have a chance to take hold and become an even bigger problem. I’m always saddened when I drive along the parkways and see the trees covered in vines. At first, it looks so green and lush, you think it’s beautiful, and then you realize the tree is dead and only the vines are living. On my property, I have endless amounts of Virginia Creeper, Poison Ivy, Porcelainberry and Oriental Bittersweet. To help identify what you have on your property, check out the Long Island Invasive Species Management Association (LIISMA).

Saturday, June 21st, Seitan Cooking Class– Seitan is a plant based, high protein, ingredient that is very versatile and can
be the star of many dishes. Please come join us on June 21st for a Farm to Table experience, and learn how to make your own Seitan. We will be making a few of my favorite dishes, Seitan Marsala, Seitan Bolognese, and Seitan Stroganoff. The Seitan Cutlets are also ideal for making sandwiches like a Vegan Cuban Steak Sandwich or Rueben with Sauerkraut or a Seitan Bánh Mi.

Thursday, July 17th– Indian Cooking Class- We’ll start the evening with Vegetable Pakoras, followed by Saag Palak with Tofu Paneer, Mixed Vegetable Coconut Curry, Saffron Rice Pilaf and Raita Salad with Cucumbers and Tomatoes. For dessert, we’ll make a Mango Crumble!
Thursday, July 24th- Mediterranean Cooking Class- We’ll start off the evening making Hummos and Baba
Ghannouj, followed by a Vegan Moussaka with Eggplant, Potatoes and Béchamel Sauce, Stuffed Zucchini with Tomato Coulis, Israeli Cous Cous Pilaf, and Fattoush Salad. We’ll end the evening with a Coconut Rice Pudding with Rose Water!
Thursday, August 7th– Pasta Night!- We’ll start the evening with an appetizer of Pesto, Sundried Tomatoes and Vegan Brie Baguettes, followed by Spaghetti Puttanesca, Pesto Bow Ties with Broccoli and Roasted Cherry Tomatoes,
Creamy Lemon Linguini Pasta with Shiitake Mushrooms and Caesar Salad. We will end the evening with a Mixed Berry Cobbler!
