iEat Green’s Zoom Cooking Classes are an Answer to Boredom in the Kitchen! Come and Play with Me, as we Cook Dinner Together! Please join us for “Let’s Cook Dinner Together” TONIGHT at 5!
During this Covid19 pandemic, iEat Green continues to offer a weekly Wednesday night, “Let’s Cook Dinner Together” cooking class on Zoom. Tonight we will be making Linguine Puttanesca with Fire Roasted Tomatoes, Artichokes, Capers and Olives, along with a Vegan Caesar Salad. This is the perfect quarantine meal, because most of the ingredients can be found in your pantry, and it’s comfort food at it’s best! During the summer months, you can make this sauce and put it over Zucchini Noodles for a lighter version of this Italian Classic!
Beginning at 5pm, EST, we will chop, cook, drink, and have fun, while getting dinner on the table! Please sign up, so I can send you the recipe ahead of time, and you can have most of the ingredients on hand. The recipes are flexible, so if you don’t have all of the ingredients, you can substitute something else or leave it out.
Starting next week, the time for our cooking classes will change to 6pm-7pm.

My guest this week on the Progressive Radio Network is Laura-Anne Minkoff-Zern, Author of “The New American Farmer: Immigration, Race, and the Struggle for Sustainability”
Laura-Anne Minkoff-Zern, is an Associate Professor of Food Studies and an affiliated faculty member in the Departments of Geography and Women’s and Gender Studies at Syracuse University. Dr. Minkoff-Zern’s research and teaching broadly explores the interactions between food and racial justice, labor movements, and transnational environmental and agricultural policy. This focus builds on her extensive experience with agricultural biodiversity projects abroad, combined with work on immigrant health issues domestically.
In her book, The New American Farmer: Immigration, Race, and the Struggle for Sustainability (MIT Press, 2019), she explores the experiences of Latino/a immigrant farmers as they transition from farmworkers to farm owners, offering a new perspective on racial inequity and sustainable farming. Dr. Minkoff-Zern argues that immigrant farmers, with their knowledge and experience of alternative farming practices, are—despite a range of challenges—actively and substantially contributing to the movement for an ecological and sustainable food system. She has also published in journals such as Geoforum, The Journal of Peasant Studies, Food, Culture, and Society, Antipode, Agriculture and Human Values, and Renewable Agriculture and Food Systems, among others. She earned a Ph.D. in Geography from the University of California, Berkeley.
