Recipe type: side dish

This simple dish is perfect for all your summertime BBQ’s and picnics. I don’t add sugar, but if like your cole slaw on the sweeter side, you can add ¼ cup of sugar.
Ingredients
  • ½ green cabbage, finely shredded
  • ½ red cabbage, finely shredded
  • 4 carrots, shredded
  • 3 Tbs. chopped parsley
  • 1 Tbs. celery seed
  • 1 cup white vinegar
  • 1 cup organic mayo, or vegan mayo
  • ¼ teaspoon salt

Instructions
  1. Start by marinating the cabbage in the 1 cup of vinegar for 4 hours.
  2. Drain.
  3. Combine the cabbage, carrots, celery seed, salt, parsley, and mayo in bowl.
  4. Serve immediately, or can be stored in the refrigerator for up to one week.

Made this tonight for dinner. Andy, Sarah, Liam, and I all inhaled it! Didn’t add sugar and didn’t have red cabbage but we all loved it. The parsley and celery seed make this! Thanks, Bhavani!
