iEat Green’s Thai Cooking Class; Brenda Sanders, Founder of Vegan SoulFest, Joins iEat Green on the Progressive Radio Network

Hi All,

This eIMG_6982vening was the last of my summer cooking classes, with the Thai Farm to Table Class. We started the eIMG_7070vening with a hands-on demo, and all made a Thai Summer Roll with Spicy Peanut Sauce. That was followed up with a Thai Kale, Cucumber and Tomato Salad with Cilantro Lime Dressing, all harvested from the on-site organic garden. For the main course, we had Coconut Encrusted Tofu with Mango Salsa, and Vegetable Panang Curry served with Saffron Rice, also using vegetables from the garden. For dessert, we made a Gluten Free Peach Cobbler, and served it with Coconut Milk Ice Cream. Yum!! It was all so much fun and so delicious!! Stay tuned for my upcoming Fall class schedule.
