iEat Green Shares Interview with ‘The Bug Chef’

Mealworms, crickets, and grasshoppers are arguably very good sources for nutrition – and are appx. 1/10 the cost of raising animals!

Last week, I interviewed David George Gordon; a chef and an award-winning author who lives in Seattle, WA and sources many of his choice cooking ingredients from around the world. Gordon, “The Bug Chef” is renown for his popular cooking demos using crickets, ants, grasshoppers, centipedes, and his own personal favorite, the mealworm! Gordon tells me that kids are actually more often keen to try his insect-based cuisine than adults are, and understandably so! Although many other cultures exhibit insects in traditional foods, Western culture does not typically include critters and crawlers as part of the meal… 

However, this new wave diet is similarly popular to the plant-based movement initiated by foodies, environmentalists, and animal lovers. Because these nutrient-dense insects provide benefits to an individual’s health as well as the environment; including the bug’s high protein, mineral, and vitamin content, as well as the reduced use of natural resources such as water and land.

Gordon’s recent re-release of The Eat-a-Bug Cookbook includes updated information about the benefits of a Bug Cuisine, along with 40 recipes to cook and prepare an assortment of insects. The cookbook is only one of his fun, quirky books, which highlight his passion and adoration for the natural world.
