iEat Green Shares Interview with Marion Nestle, Professor and Author of “Unsavory Truth”

Yesterday, I had a wonderful conversation with Marion Nestle about her new book, Unsavory Truth, which explores the conflicts of interest behind corporate funding of food studies, and how that influences the foods we eat! It is amazing how good these companies are at marketing and how they are able to spin the truth to make us believe that a certain food is healthy or at least not bad for us. We have all heard about the health benefits of dark chocolate, but did you know that the Mars company spent millions of dollars to get you to believe that? It’s not true! The flavonoids that are in dark chocolate, and were touted to be so healthy, are killed in the process of making the chocolate. So we were all fooled! And the idea that a certain food is a “Superfood” is also just a marketing scam. Many foods are healthy, but food companies are all in competition to get us to eat more calories than we need, and so they will spend millions of dollars to try to make us think that their product is superior to another. Marion Nestle’s book is a must read, for anyone who wants transparency into the nutritional benefits of the foods that they are eating.
