iEat Green Shares An Interview with Dana Gunders, Author of The Waste-Free Kitchen Handbook and Staff Scientist at the Natural Resources Defense Council

This past Thursday, I had a great interview with Dana Gunders, NRDC’s Staff Scientist who focuses on Food and Agriculture, especially when it comes to Food Waste! Her new book, The Waste-Free Kitchen Handbook, is a wonderful exposé of the agricultural landscape around food waste in this country, and offers great ideas and real everyday solutions to reducing the food we waste on a daily basis. In this country, 40% of the food produced goes to waste, and the majority of it is on the consumer level, in buying too much, cooking too much, and throwing it all away. It adds up to an average of $1,400 per family, just thrown away, not to mention the detrimental impact it has on the planet, with the wasted energy that was used to produce it, as well as the greenhouse gas emissions produced while it decomposes in a landfill.
