iEat Green Participates in the 3rd Annual Food Hackathon; Crickets for Dessert? Join iEat Green for an Interview with Megan Miller of Bitty Foods

Hi Everybody,

I just returned from a whirlwind of a weekend in San Francisco, where I participated in a Food Hackaton! What is a Food Hackathon? It is a coming together of food lovers and entrepreneurs, designers, investors and technology specialists, who all share the desire to improve our food system and want to help create better access to nutrition for all. In two days, from 8 in the morning, until 11 at night, we worked in teams to bring our ideas to fruition and present them to the judges. The winning team will have the opportunity to go to Milan for the 2015 Expo, where innovation is challenging the theme; Feeding the Planet, Energy for Life! Even though my team will not be going to Milan, the experience of participating in a food think tank, and watching what can be done when minds from different sectors of the business come together, was truly an enlightening experience for me. I’m very glad I went!

Food Waste is all over the news, and I’m so glad it is finally getting the attention it deserves. When I think of 40% of all food that is produced is wasted, it is mind boggling. It is not only the food, but all of the resources that went into creating the food that is wasted. All of the water, fertilizer, oil, labor, energy and animal life, not to mention the overfilled landfills releasing methane into the 27fri3web-articleLargeatmosphere. It is waste on so many levels! Think of all the hungry people who could have been fed with that food! Please read the articles “In the News” and lets raise everyone’s awareness about this huge problem, and let’s all start doing our part to help turn this around. Please talk to all food establishments that you patronize, restaurants, stores, bakeries, and ask them what they do with their leftovers? Make sure they know about the “Good Samaritan Act” that protects them from making a donation, and let them know that there has NEVER been even one lawsuit brought against a food establishment for donating leftover food. (I get so tired of hearing that excuse!) And volunteer to help pick it up, if that is their reason for not donating. Let’s all help to get food where it is needed and keep it out of the landfills!

This week, my guest on the Progressive Radio Network is Megan Miller, a food innovator and the founder of Bitty Foods, who has created the first bakery using cricket flour as its base! Yes, you heard me right! Bitty Foods has adopted the idea of using insects as a food resource, (very common in Asia and South America) and transformed it into a product that would be palatable to the meganWestern Market. Her cricket flour is high in protein, gluten free, and is used to make cookies, cakes, scones and other dessert items. Please join me on Thursday, and hear her story. It’s fascinating!
