iEat Green: An Interview with Vincent Simeone, Director of Horticulture at the Planting Fields Arboretum

Hi Everyone,

I am looking forward to my 2nd, Farm to Table cooking class, tonight! (Wednesday)?There are still a few spaces, so if you are free, please join us! The bounty coming out of my garden never ceases to amaze me, and the appreciation and IMG_1951awe I have for farmers continues to grow, as I spend hours tending to the various tasks of weeding, planting, harvesting and processing. Today I harvested bushels of kale, and spent hours washing, spinning and making kale chips! Wow, they are delicious! If you haven’t tried it yet, just lay out the kale on a cookie sheet and drizzle it with just a little olive oil, salt, and any other spices you might like. Then massage the kale, so that all of it is covered with the oil and spices and bake it at 300 degrees for 15-20 minutes, until crisp. Keep an eye on it, so it doesn’t burn. You may need to rotate the cookie sheet if the back of your oven is hotter. if they are not fully crisp, put them in for a few more minutes. Let them cool completely, and bag them up. They are a great, healthy snack!
