iEat Green: An Interview with Mark Bittman

Hi All,

Yesterday, I had the honor of interviewing Mark Bittman about his new book, VB6 (Vegan Before 6) and the companion cookbook that just came out this week, The VB6 Cookbook. We talked about the connection between Global Warming and Industrial Agriculture, and how being a Vegan, even part of the time, can not only improve your health, as it has done for him, but that it reduces your own personal global footprint, which is something we all need to look at seriously. The industrial food system that supports the unhealthy American Diet is responsible for more greenhouse gas emissions than all of the cars in this country. That’s a big number! We also talked about the dangers in the over use of antibiotics in animals, the increased usage of pesticides and herbicides on our crops, and the millions of dollars that food manufactures spend on marketing junk food to our children. It’s obvious that we need to improve our food system, and it would be very helpful if everyone got involved in the fight. However, we know that will take a long time, but you can start by fixing your own diet right now.
