Rutabaga Mash with Coconut and Mint

Serves: 4-6 servings
- 2 Ib. Rutabaga, peeled and cut into 1-inch chunks
- 1 piece (about 1 inch) fresh ginger, peeled and grated or finely minced
- 1 ½ teaspoon salt
- ½ cup coconut milk
- 1-2 Tbs. mint
- In a large saucepan of boiling water, cook the rutabaga, ginger and 1 teaspoon of the salt for 10 to 15 minutes, or until the rutabaga is very tender.
- Drain and return the rutabaga to the pot.
- With a potato masher, mash the rutabaga with the coconut milk and the remaining ½ teaspoon salt.
- Add the coconut milk and the mint.
- Salt and pepper to taste.
- Serve hot!
