Rutabaga Mash with Coconut and Mint

Ingredients
  • 2 Ib. Rutabaga, peeled and cut into 1-inch chunks
  • 1 piece (about 1 inch) fresh ginger, peeled and grated or finely minced
  • 1 ½ teaspoon salt
  • ½ cup coconut milk
  • 1-2 Tbs. mint
Instructions
  1. In a large saucepan of boiling water, cook the rutabaga, ginger and 1 teaspoon of the salt for 10 to 15 minutes, or until the rutabaga is very tender.
  2. Drain and return the rutabaga to the pot.
  3. With a potato masher, mash the rutabaga with the coconut milk and the remaining ½ teaspoon salt.
  4. Add the coconut milk and the mint.
  5. Salt and pepper to taste.
  6. Serve hot!
